Ingredients
- Beef stew meat
- 2 lbs, cut into 1-inch cubes
- Vegetable oil
- 2 tablespoons
- Onion
- 1 large, chopped
- Garlic
- 4 cloves, minced
- Tomatoes
- 2 cups, diced (fresh or canned)
- Beef broth
- 4 cups
- Cumin
- 1 tablespoon
- Chili powder
- 2 teaspoons
- Paprika
- 1 teaspoon
- Salt
- 1 teaspoon, or to taste
- Pepper
- 1/2 teaspoon, or to taste
- Flour
- 2 tablespoons
- Fresh cilantro
- 1/4 cup, chopped (for garnish)
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the beef stew meat and cook until browned on all sides, about 5-7 minutes. Remove the meat from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the diced tomatoes, beef broth, cumin, chili powder, paprika, salt, and pepper. Stir to combine.
- Return the browned beef stew meat to the pot. Bring the mixture to a boil, then reduce the heat to low.
- Cover the pot and let it simmer for 2 hours, or until the beef is tender and the flavors meld together.
- In a small bowl, mix the flour with a little water to create a slurry.
- Stir the slurry into the pot to thicken the sauce. Cook for an additional 10 minutes, stirring occasionally.
- Garnish with chopped cilantro before serving.
- Serve the Carne Guisada hot with rice, warm tortillas, and your favorite toppings such as avocado, sour cream, or pickled jalapeños.
