Pine nuts
1/2 cup, toasted
Almonds
1 cup, toasted and roughly chopped
Eggs
2 large
Sugar
1 cup, granulated
Flour
2 1/2 cups, all-purpose

  1. Preheat the oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, thoroughly mix the flour, sugar, baking powder, and salt.
  3. Crack the eggs into the bowl and beat them into the flour mixture until a rough dough forms.
  4. Stir in the toasted almonds and pine nuts, ensuring they are evenly distributed throughout the dough.
  5. On a lightly floured surface, shape the dough into a log about 2 inches in diameter. Carefully transfer the log to your prepared baking sheet.
  6. Bake the log in the preheated oven for 30 minutes, or until it turns a beautiful golden brown.
  7. Allow the log to cool for about 10 minutes, then slice it into 1/2-inch thick slices using a sharp serrated knife. Be gentle to prevent the slices from crumbling.
