Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
- Stir in the chopped carrots and cook for an additional 5 minutes, allowing the flavors to meld.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes, or until the carrots are tender.
- Remove the pot from heat and let the soup cool slightly for safer blending.
- Using an immersion blender, puree the soup until it reaches a smooth and creamy consistency. You can also use a regular blender in batches if necessary.
- Return the blended soup to the pot and stir in the chopped dill and heavy cream.
- Season the soup with salt and pepper to taste, adjusting as needed.
- Reheat the soup over low heat until warmed through, but do not let it boil.
- Serve hot, garnished with additional fresh dill if desired.
Tips
- For a vegan version, substitute heavy cream with coconut cream or a plant-based cream alternative.
- Add a touch of lemon juice for acidity to brighten the flavors.
- Serve with crusty bread or a side salad for a complete meal.
