This refreshing carrot and endive salad is packed with flavor and crunch.
Ingredients
- Salt and pepper (to taste)
- Honey (1 tablespoon)
- Dijon mustard (1 tablespoon)
- Olive oil (2 tablespoons)
- Lemon juice (2 tablespoons)
- Fresh parsley (1/4 cup, chopped)
- Red onion (1/4 cup, thinly sliced)
- Endive (2 heads, thinly sliced)
- Carrots (4 medium, grated)
Instructions
- In a large bowl, combine the grated carrots, sliced endive, red onion, and chopped parsley.
