Ingredients

  • Salt and pepper (to taste)
  • Honey (1 tablespoon)
  • Dijon mustard (1 tablespoon)
  • Olive oil (2 tablespoons)
  • Lemon juice (2 tablespoons)
  • Fresh parsley (1/4 cup, chopped)
  • Red onion (1/4 cup, thinly sliced)
  • Endive (2 heads, thinly sliced)
  • Carrots (4 medium, grated)

Instructions

  1. In a large bowl, combine the grated carrots, sliced endive, red onion, and chopped parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat evenly.
