Crunchy Carrot and Fennel Salad

Ingredients
- Salt
- 1/2 teaspoon or to taste
- Black pepper
- 1/2 teaspoon or to taste
- Honey
- 1 tablespoon
- Extra virgin olive oil
- 3 tablespoons
- Fresh lemon juice
- 2 tablespoons
- Fresh parsley
- 1/4 cup, finely chopped
- Fennel bulb
- 1 large, thinly sliced
- Carrots
- 4 large, peeled and grated
Instructions
- Prepare the vegetables by grating the carrots and thinly slicing the fennel bulb.
- In a large bowl, combine the grated carrots, sliced fennel, and finely chopped parsley.
- For the dressing, in a separate smaller bowl, whisk together the fresh lemon juice, extra virgin olive oil, honey, salt, and black pepper until well combined.
- Pour the freshly prepared dressing over the carrot and fennel mixture. Toss the salad until all the ingredients are evenly coated.
- Let the salad sit for at least 10 minutes to allow the flavors to meld together. This also gives the carrots and fennel time to marinate and absorb the dressing.
- Serve the salad chilled. This salad can be prepared a few hours in advance, making it a perfect dish for meal prepping or for events.
