
Carrot and Green Bean Salad
This refreshing carrot and green bean salad is packed with flavor and crunch.
Ingredients
- Salt and pepper (to taste)
- Honey (1 tablespoon)
- Dijon mustard (1 tablespoon)
- Olive oil (2 tablespoons)
- Lemon juice (2 tablespoons)
- Fresh parsley (1/4 cup, chopped)
- Cherry tomatoes (1 cup, halved)
- Red onion (1/4 cup, thinly sliced)
- Green beans (1/2 pound, trimmed and blanched)
- Carrots (4 medium, julienned)
Instructions
- In a large bowl, combine the julienned carrots, blanched green beans, sliced red onion, halved cherry tomatoes, and chopped parsley.
- In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper.
- Pour the dressing over the salad and toss to coat evenly.
- Refrigerate for at least 30 minutes to allow the flavors to meld.
