Carrots
2 large, julienned
Green beans
2 cups, trimmed and blanched
Cherry tomatoes
1 cup, halved
Red onion
1/2 medium, thinly sliced
Fresh parsley
1/4 cup, chopped
Olive oil
3 tablespoons
Lemon juice
2 tablespoons, freshly squeezed
Dijon mustard
1 tablespoon
Honey
1 teaspoon
Salt
to taste
Black pepper
to taste

Instructions

  1. Begin by preparing the vegetables: julienne the carrots, trim and blanch the green beans (boil for 2-3 minutes, then plunge into ice water), halve the cherry tomatoes, and thinly slice the red onion.
  2. In a large bowl, combine the julienned carrots, blanched green beans, sliced red onion, halved cherry tomatoes, and chopped parsley.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and black pepper until well combined to create the dressing.
  4. Pour the dressing over the salad mixture and toss gently to coat all the vegetables evenly.
  5. For the best flavor, cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
  6. Serve chilled, garnished with additional parsley if desired, and enjoy the refreshing crunch!
