Carrot and Green Bean Salad

This refreshing carrot and green bean salad is packed with flavor and crunch.

Ingredients

  • Salt and pepper (to taste)
  • Honey (1 tablespoon)
  • Dijon mustard (1 tablespoon)
  • Olive oil (2 tablespoons)
  • Lemon juice (2 tablespoons)
  • Fresh parsley (1/4 cup, chopped)
  • Cherry tomatoes (1 cup, halved)
  • Red onion (1/4 cup, thinly sliced)
  • Green beans (1/2 pound, trimmed and blanched)
  • Carrots (4 medium, julienned)

Instructions

  1. In a large bowl, combine the julienned carrots, blanched green beans, sliced red onion, halved cherry tomatoes, and chopped parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled and enjoy!
