- Green beans
- 2 cups, trimmed and blanched

- Lemon juice
- 2 tablespoons, freshly squeezed

Instructions
- Begin by preparing the vegetables: julienne the carrots, trim and blanch the green beans (boil for 2-3 minutes, then plunge into ice water), halve the cherry tomatoes, and thinly slice the red onion.
- In a large bowl, combine the julienned carrots, blanched green beans, sliced red onion, halved cherry tomatoes, and chopped parsley.
- In a separate small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and black pepper until well combined to create the dressing.
- Pour the dressing over the salad mixture and toss gently to coat all the vegetables evenly.
- For the best flavor, cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
