Instructions

  1. Start by rinsing the quinoa under cold water until the water runs clear. This step is crucial to remove any bitter saponins that coat the quinoa seeds.
  2. Cook the quinoa according to package instructions. Once cooked, fluff it with a fork and let it cool.
  3. In a large mixing bowl, combine the cooled quinoa, grated carrots, diced cucumber, diced red bell pepper, and chopped parsley.
