
Carrot and Raisin Salad

Ingredients
- Chopped parsley (2 tablespoons)
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Honey (1 tablespoon)
- Lemon juice (2 tablespoons)
- Mayonnaise (1/2 cup)
- Raisins (1 cup)
- Carrots (4 large, grated)
Instructions
- In a large bowl, combine the grated carrots and raisins.
- In a separate small bowl, whisk together the mayonnaise, lemon juice, honey, salt, and black pepper.
- Pour the dressing over the carrot and raisin mixture and toss to coat evenly.
- Garnish with chopped parsley.
