
Carrot Ginger Soup
This creamy and flavorful carrot ginger soup is a perfect blend of sweet carrots and spicy ginger.
Ingredients
- Fresh cilantro (for garnish)
- Salt and pepper (to taste)
- Lime juice (2 tablespoons)
- Coconut milk (1 cup)
- Vegetable broth (4 cups)
- Garlic (2 cloves, minced)
- Fresh ginger (1 tablespoon, grated)
- Onion (1 medium, chopped)
- Carrots (1 pound, peeled and chopped)
Instructions
- In a large pot, heat some oil over medium heat.
- Add the chopped onion, grated ginger, and minced garlic. Sauté until the onion is translucent and fragrant.
- Add the chopped carrots and vegetable broth. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until the carrots are tender.
- Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
- Stir in the coconut milk and lime juice. Season with salt and pepper to taste.
- Simmer for another 5 minutes to heat through.
- Serve hot, garnished with fresh cilantro leaves.
