- Vegetable broth (4 cups)
- Coconut milk (1 cup)
- Lime juice (2 tablespoons)
- Fresh cilantro (for garnish)
- Salt (to taste)
- Black pepper (to taste)
- Oil (2 tablespoons (for sautéing))
Instructions
- In a large pot, heat the oil over medium heat.
- Add the chopped onion, grated ginger, and minced garlic. Sauté for about 5-7 minutes, or until the onion becomes translucent and fragrant.
