Carrots
2 medium-sized, peeled and chopped
Yogurt
1 cup, plain and unsweetened
Milk
1/2 cup, chilled
Honey
2 tablespoons, adjust to taste
Cardamom powder
1/2 teaspoon
Ice cubes
1 cup

  1. Begin by boiling the peeled and chopped carrots in water until they are soft, about 15-20 minutes. Drain and allow them to cool completely.
  2. In a blender, combine the cooled carrots, yogurt, chilled milk, honey, cardamom powder, and ice cubes.
  3. Blend on high speed until the mixture is smooth and frothy, about 1-2 minutes.
  4. Taste the lassi and adjust the sweetness with additional honey if desired.
