Carrot Raisin Salad

This refreshing carrot raisin salad is made with shredded carrots, plump raisins, and a tangy dressing.

Ingredients

  • Chopped parsley (2 tablespoons)
  • Black pepper (1/4 teaspoon)
  • Salt (1/4 teaspoon)
  • Honey (2 tablespoons)
  • Lemon juice (2 tablespoons)
  • Mayonnaise (1/2 cup)
  • Raisins (1 cup)
  • Carrots (4 large, shredded)

Instructions

  1. In a large bowl, combine the shredded carrots and raisins.
  2. In a separate small bowl, whisk together the mayonnaise, lemon juice, honey, salt, and black pepper.
  3. Pour the dressing over the carrot and raisin mixture and toss until well coated.
