- Grated cassava
- 2 cups, fresh or frozen
- Coconut milk
- 1 cup
- Condensed milk
- 1 cup
- Eggs
- 3 large, beaten
- Unsalted butter
- 1/2 cup, melted
- Vanilla extract
- 1 teaspoon
- Sugar
- 1/2 cup
- Grated cheese
- 1/2 cup (preferably sharp cheddar or a local variety)
- Coconut flakes
- 1/2 cup, for topping
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or cooking spray.
- In a large mixing bowl, combine the grated cassava, coconut milk, condensed milk, beaten eggs, melted butter, vanilla extract, grated cheese, and sugar. Use a spatula or whisk to mix well until all ingredients are fully incorporated.
- Pour the mixture into the greased baking dish and spread it evenly with the spatula.
- Bake in the preheated oven for 45-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
