Roasted Chestnuts (Castanhas)

Ingredients
- Chestnuts
- 1 pound, whole and fresh
- Olive oil
- 1 tablespoon
- Salt
- to taste
- Optional: Fresh herbs (such as rosemary or thyme)

Instructions
- Preheat your oven to 400°F (200°C).
- Using a sharp knife, carefully make a small slit or an 'X' on the flat side of each chestnut. This allows steam to escape and prevents them from bursting while roasting.
- Place the chestnuts on a baking sheet in a single layer and drizzle with olive oil. Toss gently to coat each chestnut evenly.
- Sprinkle the chestnuts with salt to taste, ensuring they are well-seasoned.
- Roast in the preheated oven for 20-25 minutes, or until the chestnuts are tender and the skins have started to peel back.
- Remove from the oven and let cool for a few minutes before handling. Be careful, as they will be hot!
- Peel the chestnuts while they are still warm, discarding the outer shell and the inner skin. Enjoy them as is, or garnish with fresh herbs if desired.
