Ingredients

Chestnuts
1 pound, whole and fresh
Olive oil
1 tablespoon
Salt
to taste
Optional: Fresh herbs (such as rosemary or thyme)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Using a sharp knife, carefully make a small slit or an 'X' on the flat side of each chestnut. This allows steam to escape and prevents them from bursting while roasting.
  3. Place the chestnuts on a baking sheet in a single layer and drizzle with olive oil. Toss gently to coat each chestnut evenly.
  4. Sprinkle the chestnuts with salt to taste, ensuring they are well-seasoned.
  5. Roast in the preheated oven for 20-25 minutes, or until the chestnuts are tender and the skins have started to peel back.
  6. Remove from the oven and let cool for a few minutes before handling. Be careful, as they will be hot!
  7. Peel the chestnuts while they are still warm, discarding the outer shell and the inner skin. Enjoy them as is, or garnish with fresh herbs if desired.
