Ingredients

Cauliflower
1 large head, cut into florets
Unsalted butter
4 tablespoons
All-purpose flour
2 tablespoons
Whole milk
2 cups
Sharp Cheddar cheese
2 cups, shredded
Parmesan cheese
1/2 cup, grated
Breadcrumbs
1/2 cup
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the cauliflower florets in a steamer over boiling water, and steam until they are tender but still have a bite, about 5-7 minutes. Once done, drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for 1-2 minutes to create a roux.
  4. Gradually add the milk, while whisking continuously, until the mixture turns into a smooth, thick sauce. This should take about 5 minutes.
  5. Remove the saucepan from heat, and stir in the shredded Cheddar cheese until it fully melts into the sauce. Season with salt and pepper as per your taste.
  6. Arrange the steamed cauliflower in a baking dish, and pour the cheese sauce evenly over it.
  7. In a small bowl, combine the grated Parmesan cheese and breadcrumbs. Sprinkle this mixture over the cauliflower and cheese sauce.
  8. Bake for 20-25 minutes, or until the top turns golden brown and the sauce is bubbly.
  9. Let the dish cool for a few minutes before serving. This dish is the perfect accompaniment to a roast dinner or can stand alone as a delectable dish.
