Cebada is a beloved traditional Mexican beverage made from pearl barley, infused with the warm flavors of cinnamon and a hint of vanilla. This drink is perfect for cooling down on sweltering summer days and is often enjoyed at festivals and family gatherings. Its slightly sweet and zesty profile, combined with the nutty taste of barley, makes Cebada a refreshing and nutritious choice that embodies the spirit of Mexican culture. Serve it chilled over ice for a delightful treat that will transport you to sunny days and festive celebrations.

Servings: 6

Ingredients

Pearl barley
1 cup
Water
6 cups
Cinnamon stick
1
Granulated sugar
1/2 cup (adjust to taste)
Lime juice
1/4 cup (freshly squeezed)
Vanilla extract
1 teaspoon
Ice cubes
for serving

Instructions

  1. Rinse the pearl barley under cold water until the water runs clear. This helps to remove any excess starch, ensuring a lighter drink.
  2. In a large pot, combine the rinsed barley, 6 cups of water, and the cinnamon stick. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and let it simmer for about 1 hour, or until the barley is tender and has a chewy texture.
  4. Remove from heat and allow the mixture to cool slightly. Discard the cinnamon stick and drain any excess water if necessary.
  5. In a large pitcher, stir in the granulated sugar, freshly squeezed lime juice, and vanilla extract. Adjust the sugar according to your taste preference.
  6. Refrigerate the Cebada for at least 2 hours to chill and allow the flavors to meld together.
  7. Serve Cebada cold over ice, garnished with a slice of lime or a sprinkle of cinnamon if desired.
