Creamy Celery Root and Cauliflower Soup

Ingredients

Celery root
1 large, peeled and diced
Cauliflower
1 medium head, chopped
Olive oil
2 tablespoons
Onion
1 medium, diced
Garlic
3 cloves, minced
Vegetable broth
4 cups
Coconut milk
1 cup
Fresh parsley
1/4 cup, chopped (for garnish)
Thyme
1 teaspoon, dried
Bay leaf

Salt
to taste
Pepper
to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic to the pot. Sauté until the onion turns translucent, about 5 minutes.
  3. Stir in the diced celery root and chopped cauliflower, followed by the vegetable broth, dried thyme, bay leaf, and a pinch of salt and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low and let it simmer for 20 minutes, or until the vegetables are tender.
  5. Remove the bay leaf and discard it.
  6. Using an immersion blender, blend the soup until it reaches a smooth and creamy consistency. Alternatively, carefully transfer the soup to a blender in batches to blend until smooth.
  7. Stir in the coconut milk and gently heat for an additional 5 minutes, stirring occasionally.
  8. Serve the soup hot, garnished with freshly chopped parsley for a pop of color and freshness.
