Creamy Celery Root and Cauliflower Soup

Ingredients
- Celery root
- 1 large, peeled and diced
- Cauliflower
- 1 medium head, chopped
- Olive oil
- 2 tablespoons
- Onion
- 1 medium, diced
- Garlic
- 3 cloves, minced
- Vegetable broth
- 4 cups
- Coconut milk
- 1 cup
- Fresh parsley
- 1/4 cup, chopped (for garnish)
- Thyme
- 1 teaspoon, dried
- Bay leaf
- 1
- Salt

- Pepper

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic to the pot. Sauté until the onion turns translucent, about 5 minutes.
- Stir in the diced celery root and chopped cauliflower, followed by the vegetable broth, dried thyme, bay leaf, and a pinch of salt and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer for 20 minutes, or until the vegetables are tender.
- Remove the bay leaf and discard it.
- Using an immersion blender, blend the soup until it reaches a smooth and creamy consistency. Alternatively, carefully transfer the soup to a blender in batches to blend until smooth.
- Stir in the coconut milk and gently heat for an additional 5 minutes, stirring occasionally.
- Serve the soup hot, garnished with freshly chopped parsley for a pop of color and freshness.
