Instructions
- In a large glass or ceramic bowl, combine the diced fish and freshly squeezed lime juice. Ensure the fish is fully submerged in the lime juice to 'cook' it. Cover and marinate in the refrigerator for at least 15 minutes, though 30 minutes will yield an even more flavorful result.
- After 15 minutes, check if the fish has turned opaque, indicating it is 'cooked'. This process is known as 'curing'.
- Add the finely chopped red onion, diced tomato, diced cucumber, chopped cilantro, jalapeño, and salt to the marinated fish. Gently mix to combine all ingredients evenly, being careful not to break up the fish too much.
