Ingredients

White fish fillets (like tilapia or snapper)
1 pound, cut into small cubes
Lime juice
1 cup, freshly squeezed
Salt
to taste
Red onion
1 small, thinly sliced
Cilantro
1/2 cup, chopped
Jalapeno
1, minced (adjust for spice level)
Sweet potatoes
2 medium, peeled and cut into thick slices
Corn
1 cup, cooked (or use canned corn)
Avocado (optional)
1, sliced for garnish

Instructions

  1. Start by cooking the sweet potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and keep warm.
  2. While the sweet potatoes are cooking, place the fish cubes in a glass dish and cover with the lime juice. Ensure the fish is fully submerged. Let marinate in the refrigerator for at least 2 hours, or until the fish is opaque.
  3. After marinating, gently drain the fish, reserving about 1/4 cup of the lime juice.
  4. In a mixing bowl, combine the drained fish with the sliced red onion, chopped cilantro, minced jalapeno, and salt. Add some of the reserved lime juice to taste, adjusting the seasoning as desired.
  5. To serve, arrange the ceviche on plates with the warm sweet potato slices and corn on the side. Garnish with avocado slices, if using.
