Ceviche de Pescado
Ceviche de Pescado is a vibrant and refreshing dish that embodies the essence of Peruvian coastal cuisine. This traditional delicacy features succulent raw fish marinated in zesty lime juice, which transforms the fish into a tender and flavorful treat. Brightened by the crunch of fresh vegetables and the warmth of sweet potatoes, this dish is a perfect balance of flavors and textures, making it an ideal appetizer or light meal. Historically, ceviche has been enjoyed in Peru for centuries, believed to have originated from the ancient Moche civilization, and it continues to be a beloved staple in Peruvian culture today.
Servings: 4
Ingredients
- White fish fillets (like tilapia or snapper)
- 1 pound, cut into small cubes
- Lime juice
- 1 cup, freshly squeezed
- Salt
- to taste
- Red onion
- 1 small, thinly sliced
- Cilantro
- 1/2 cup, chopped
- Jalapeno
- 1, minced (adjust for spice level)
- Sweet potatoes
- 2 medium, peeled and cut into thick slices
- Corn
- 1 cup, cooked (or use canned corn)
- Avocado (optional)
- 1, sliced for garnish
Instructions
- Start by cooking the sweet potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and keep warm.
- While the sweet potatoes are cooking, place the fish cubes in a glass dish and cover with the lime juice. Ensure the fish is fully submerged. Let marinate in the refrigerator for at least 2 hours, or until the fish is opaque.
- After marinating, gently drain the fish, reserving about 1/4 cup of the lime juice.
- In a mixing bowl, combine the drained fish with the sliced red onion, chopped cilantro, minced jalapeno, and salt. Add some of the reserved lime juice to taste, adjusting the seasoning as desired.
- To serve, arrange the ceviche on plates with the warm sweet potato slices and corn on the side. Garnish with avocado slices, if using.
