Cha Ruoi, a delicacy hailing from the coastal regions of Vietnam, is a traditional omelette enriched with the unique flavor of sandworms. This dish is usually enjoyed as a distinctive appetizer or a hearty main, paired with steamed rice. The eggs and sandworms blend seamlessly to create a symphony of flavors, elevated by the subtle hint of fish sauce and the freshness of spring onions. This dish is deeply embedded in Vietnamese culture, particularly in coastal communities where sandworms are abundant. It's not just a dish, but a culinary tradition passed down through generations.

Servings: 4

Ingredients

Cooking oil
2 tablespoons
Black pepper
1/2 teaspoon, freshly ground
Salt
1/2 teaspoon
Fish sauce
1 tablespoon
Spring onions
2, finely chopped
Eggs
4, beaten
Sandworms
1 cup, cleaned and rinsed

Instructions

  1. Begin by rinsing the sandworms under cold water until they are thoroughly cleaned.
  2. In a bowl, combine the beaten eggs, chopped spring onions, fish sauce, salt, and freshly ground black pepper. Stir until all ingredients are well incorporated.
  3. Heat the cooking oil in a non-stick frying pan over medium heat.
  4. Add the cleaned sandworms to the pan and stir-fry for about 2-3 minutes, or until they are well-cooked.
  5. Pour the egg mixture over the cooked sandworms, ensuring they are evenly distributed across the pan.
  6. Allow the omelette to cook undisturbed for approximately 5 minutes, or until the bottom turns a golden brown color.
  7. Flip the omelette carefully and cook for another 3-4 minutes, ensuring the other side is equally cooked and golden brown.
  8. Once fully cooked, transfer the omelette to a serving plate and cut into even slices.
  9. Serve the Cha Ruoi hot as an appetizer, or pair it with steamed jasmine rice for a satisfying main dish.
