Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until the mixture is light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, baking powder, chai spice blend, and salt until evenly combined.
- Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined. Be careful not to overmix.
- Using a rounded tablespoon, drop dollops of cookie dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may appear slightly soft but will firm up as they cool.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Tips
- For an extra burst of flavor, consider adding chopped nuts or dried fruits to the cookie dough.
- These cookies pair wonderfully with a cup of chai tea or coffee, making them perfect for afternoon tea or holiday gatherings.
- For a spicier kick, increase the chai spice blend to 2.5 teaspoons or add a pinch of cayenne pepper.
