Ingredients

Vegetable oil
for frying
Corn tortillas
8 large
Refried beans
2 cups, warmed
Shredded chicken
2 cups, cooked and seasoned
Lettuce
2 cups, shredded
Tomatoes
2 cups, diced
Cheese
1 cup, crumbled (queso fresco or cheddar)
Avocado
2, sliced
Cilantro
1/2 cup, chopped
Salt
to taste
Lime
2, cut into wedges
Salsa
1 cup, your choice (store-bought or homemade)

Instructions

  1. In a frying pan, heat enough vegetable oil over medium heat to cover the bottom of the pan.
  2. Fry the corn tortillas one at a time for about 1-2 minutes, or until they are crispy and golden brown. Transfer them to a paper towel-lined plate to drain any excess oil.
  3. Spread a generous layer of warmed refried beans on each crispy tortilla.
  4. Top each tortilla with shredded chicken, followed by shredded lettuce, diced tomatoes, and crumbled cheese.
  5. Drizzle salsa over the top and add slices of avocado.
  6. Sprinkle chopped cilantro over the chalupas and season with salt to taste.
  7. Serve immediately with lime wedges on the side for an extra burst of flavor.
