Chalupa Huasteca is a traditional Mexican dish made with fried tortillas, refried beans, shredded chicken, lettuce, tomatoes, cheese, and salsa.
Ingredients
- Vegetable oil (for frying)
- Salt (to taste)
- Lime (1, cut into wedges)
- Cilantro (1/4 cup, chopped)
- Avocado (1, sliced)
- Salsa (1/2 cup)
- Cheese (1 cup, shredded)
- Tomatoes (2, diced)
- Lettuce (1 cup, shredded)
- Shredded chicken (2 cups)
- Refried beans (1 cup)
- Corn tortillas (8)
Instructions
- Heat vegetable oil in a frying pan over medium heat.
- Fry the corn tortillas one at a time until crispy and golden brown. Drain on paper towels.
- Spread a layer of refried beans on each tortilla.
- Top with shredded chicken, lettuce, tomatoes, cheese, salsa, avocado, and cilantro.
- Season with salt to taste.
- Serve the chalupas with lime wedges on the side.
