Ingredients

Corn tortillas
8 small
Vegetable oil
2 cups (for frying)
Refried beans
1 can (15 oz), warmed
Chicken breast
2 cups, cooked and shredded
Lettuce
1 cup, shredded
Tomatoes
1 cup, diced
Cheese
1 cup, shredded (cheddar or queso fresco)
Sour cream
1/2 cup
Salsa
1/2 cup (store-bought or homemade)
Cilantro
1/4 cup, chopped
Salt
to taste
Pepper
to taste

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat until hot.
  2. Fry the corn tortillas one at a time, cooking for about 2-3 minutes on each side or until they are crispy and golden brown. Drain on paper towels to remove excess oil.
  3. In a separate saucepan, heat the refried beans over low heat until warmed through, stirring occasionally.
  4. Spread a generous layer of refried beans on each fried tortilla, ensuring an even coating.
  5. Top each chalupa with shredded chicken, followed by a layer of lettuce, diced tomatoes, and shredded cheese.
