Ingredients

  • Corn tortillas (8 small)
  • Vegetable oil (2 cups (for frying))
  • Refried beans (1 can (15 oz), warmed)
  • Chicken breast (2 cups, cooked and shredded)
  • Lettuce (1 cup, shredded)
  • Tomatoes (1 cup, diced)
  • Cheese (1 cup, shredded (cheddar or queso fresco))
  • Sour cream (1/2 cup)
  • Salsa (1/2 cup (store-bought or homemade))
  • Cilantro (1/4 cup, chopped)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat until hot.
  2. Fry the corn tortillas one at a time, cooking for about 2-3 minutes on each side or until they are crispy and golden brown. Drain on paper towels to remove excess oil.
  3. In a separate saucepan, heat the refried beans over low heat until warmed through, stirring occasionally.
  4. Spread a generous layer of refried beans on each fried tortilla, ensuring an even coating.
  5. Top each chalupa with shredded chicken, followed by a layer of lettuce, diced tomatoes, and shredded cheese.
