Ingredients
- Potatoes
- 2 pounds, peeled and chopped
- Scallions
- 1 cup, finely sliced
- Unsalted butter
- 4 tablespoons
- Milk
- 1/2 cup, warmed
- Salt
- 1 teaspoon, or to taste
- Black pepper
- 1/2 teaspoon, or to taste
Instructions
- Place the peeled and chopped potatoes in a large pot. Cover with cold water and add a generous pinch of salt. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 15-20 minutes.
- While the potatoes are cooking, melt the unsalted butter in a small saucepan over low heat. Add the finely sliced scallions and cook gently until softened but not browned, about 5 minutes.
- Once the potatoes are done, drain them well and return them to the pot. Using a potato masher or fork, mash the potatoes until they reach a smooth consistency.
- Stir in the cooked scallions along with the melted butter, warmed milk, salt, and black pepper. Mix until well combined and creamy. Taste and adjust the seasoning if necessary.
- Serve the champ hot, garnished with a few extra sliced scallions if desired.
