Champ

Champ is a traditional Irish dish made with mashed potatoes and scallions.

Ingredients

  • Black pepper (to taste)
  • Salt (to taste)
  • Milk (1/2 cup)
  • Butter (4 tablespoons)
  • Scallions (1 bunch, thinly sliced)
  • Potatoes (2 pounds, peeled and quartered)

Instructions

  1. Place the potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
  2. While the potatoes are cooking, melt the butter in a small saucepan over low heat. Add the sliced scallions and cook until softened, about 5 minutes.
  3. Drain the cooked potatoes and return them to the pot. Mash the potatoes with a potato masher or fork until smooth.
  4. Add the cooked scallions, melted butter, milk, salt, and black pepper to the mashed potatoes. Stir until well combined.
  5. Taste and adjust the seasoning if needed.
  6. Serve the champ hot as a side dish with your favorite main course.
