
Champ
Champ is a traditional Irish dish made with mashed potatoes and scallions.
Ingredients
- Black pepper (to taste)
- Salt (to taste)
- Milk (1/2 cup)
- Butter (4 tablespoons)
- Scallions (1 bunch, thinly sliced)
- Potatoes (2 pounds, peeled and quartered)
Instructions
- Place the potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
- While the potatoes are cooking, melt the butter in a small saucepan over low heat. Add the sliced scallions and cook until softened, about 5 minutes.
- Drain the cooked potatoes and return them to the pot. Mash the potatoes with a potato masher or fork until smooth.
- Add the cooked scallions, melted butter, milk, salt, and black pepper to the mashed potatoes. Stir until well combined.
- Taste and adjust the seasoning if needed.
- Serve the champ hot as a side dish with your favorite main course.
