Char Kroeung Sach Ko

Char Kroeung Sach Ko is a traditional Cambodian stir-fry dish made with lemongrass paste and beef.

Ingredients

  • Salt (to taste)
  • Red chili peppers (2, thinly sliced)
  • Vegetable oil (2 tablespoons)
  • Sugar (1 tablespoon)
  • Fish sauce (2 tablespoons)
  • Kaffir lime leaves (4 leaves, thinly sliced)
  • Shallots (2, finely chopped)
  • Garlic (4 cloves, minced)
  • Lemongrass (3 stalks, finely chopped)
  • Beef (500 grams, thinly sliced)

Instructions

  1. In a bowl, combine the lemongrass, garlic, shallots, kaffir lime leaves, fish sauce, sugar, and salt to make the lemongrass paste.
  2. Heat the vegetable oil in a wok or large skillet over high heat.
  3. Add the lemongrass paste and stir-fry for 1-2 minutes until fragrant.
  4. Add the beef slices and stir-fry for 3-4 minutes until cooked through.
  5. Add the red chili peppers and stir-fry for an additional 1 minute.
  6. Remove from heat and serve hot with steamed rice.
