Servings: 4
Ingredients
- Salt
- 1 teaspoon
- Red chili peppers
- 2, finely sliced
- Vegetable oil
- 2 tablespoons
- Sugar
- 1 tablespoon
- Fish sauce
- 2 tablespoons
- Kaffir lime leaves
- 2, finely sliced
- Shallots
- 2, finely chopped
- Garlic
- 3 cloves, minced
- Lemongrass
- 2 stalks, finely chopped
- Beef
- 500 grams, thinly sliced
Instructions
- Begin by preparing the lemongrass paste. In a bowl, combine the finely chopped lemongrass, minced garlic, chopped shallots, finely sliced kaffir lime leaves, fish sauce, sugar, and salt. Mix them thoroughly until you have a fragrant, well-blended paste.
- Heat the vegetable oil in a wok or large skillet over high heat. Once the oil is hot, add the lemongrass paste. Stir-fry for 1-2 minutes until the paste becomes fragrant, indicating that the flavors have begun to meld.
- Add the thinly sliced beef to the wok. Continue to stir-fry for 3-4 minutes until the beef is well-cooked and has absorbed the flavors of the paste.
- Finally, add the finely sliced red chili peppers to the wok, stirring and frying for an additional 1 minute. This adds a final kick of heat to the dish.
- Remove the wok from the heat, and let the dish sit for a couple of minutes to allow the flavors to deepen.
- Serve hot, ideally with a side of steamed jasmine rice to complement the bold flavors of the stir-fry. Enjoy your authentic Cambodian Char Kroeung Sach Ko!
