Ingredients

Graham cracker crumbs
1 1/2 cups
Unsalted butter
1/2 cup, melted
Cream cheese
4 (8-ounce) packages, softened
Granulated sugar
1 cup
All-purpose flour
2 tablespoons
Vanilla extract
1 teaspoon
Sour cream
1 cup
Eggs
4 large
Fresh fruit, chocolate sauce, or caramel
for topping (optional)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until well combined, then firmly press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes and let cool.
  3. In a separate mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
  4. Gradually add the granulated sugar and flour, mixing until fully incorporated and smooth.
  5. Add the vanilla extract, sour cream, and eggs one at a time, beating well after each addition until the mixture is creamy and well combined.
  6. Pour the cream cheese mixture over the prepared crust in the springform pan, smoothing the top with a spatula.
  7. Bake in the preheated oven for 60 minutes, or until the center is set and the top is lightly golden. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  8. Remove from the oven and let cool in the pan for 10 minutes. Run a knife around the edges of the pan to loosen the cheesecake, then gently remove the sides of the springform pan.
  9. Refrigerate for at least 4 hours, or overnight for best results, before slicing.
