Bacon
6 slices, chopped
Potatoes
3 medium, diced
Onion
1 medium, diced
Garlic
2 cloves, minced
Cheddar cheese
1 cup, shredded
Eggs
4 large
Salt
to taste
Pepper

Olive oil
1 tablespoon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet, leaving the rendered fat for flavor, and set it aside.
  3. Add the diced potatoes and onion to the same skillet. If desired, add one tablespoon of olive oil for extra richness. Cook, stirring occasionally, until the potatoes are golden and crispy, about 10-12 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant, ensuring not to burn the garlic.
  5. Crumble the cooked bacon over the potato mixture and sprinkle the shredded cheddar cheese evenly on top, allowing it to melt into the hash.
  6. Create four wells in the hash using the back of a spoon and crack an egg into each well.
  7. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the eggs are cooked to your desired doneness (less time for runny yolks, longer for firmer yolks).
