Cheesy Bacon and Egg Hash

Kickstart your morning with our indulgent Cheesy Bacon and Egg Hash, a delightful medley of crispy bacon, golden-brown potatoes, and gooey cheddar cheese, all crowned with perfectly baked eggs. This hearty breakfast dish has its roots in the 19th century, representing a creative way to repurpose leftover ingredients into a comforting meal that warms the heart. Each mouthful delivers a satisfying crunch and a burst of rich flavors, making it the ultimate breakfast choice. For a complete morning feast, pair it with buttered toast or a refreshing fruit salad!

Serves 4

Ingredients

Bacon
6 slices, chopped
Potatoes
3 medium, diced
Onion
1 medium, diced
Garlic
2 cloves, minced
Cheddar cheese
1 cup, shredded
Eggs
4 large
Salt
to taste
Pepper
to taste
Olive oil
1 tablespoon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet, leaving the rendered fat for flavor, and set it aside.
  3. Add the diced potatoes and onion to the same skillet. If desired, add one tablespoon of olive oil for extra richness. Cook, stirring occasionally, until the potatoes are golden and crispy, about 10-12 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant, ensuring not to burn the garlic.
  5. Crumble the cooked bacon over the potato mixture and sprinkle the shredded cheddar cheese evenly on top, allowing it to melt into the hash.
  6. Create four wells in the hash using the back of a spoon and crack an egg into each well.
  7. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the eggs are cooked to your desired doneness (less time for runny yolks, longer for firmer yolks).
  8. Season the hash with salt and pepper to taste before serving. Serve hot and enjoy your hearty breakfast!

Tips

  • 💡 For added flavor, consider incorporating diced bell peppers or fresh herbs like parsley or chives.
  • 💡 Swap out cheddar for your favorite cheese, such as gouda or pepper jack, to change up the flavor profile.
  • 💡 If you're looking for a healthier twist, substitute turkey bacon for traditional bacon and sweet potatoes for regular potatoes.
