Ingredients

Original recipe serves 6

Pandan leaves
2-3 leaves, tied into a knot
Rock sugar
100g (adjust to taste)
Barley
1/2 cup
White fungus
20g, soaked
Lotus seeds
1/2 cup, soaked
Dried longan
1/2 cup
Water
2 liters

Instructions

  1. Soak the lotus seeds, white fungus, and barley in separate bowls of water for at least 2 hours, or overnight for best results.
  2. In a large pot, bring 2 liters of water to a boil over medium heat.
  3. Add the soaked lotus seeds, white fungus, barley, dried longan, and tied pandan leaves into the pot.
  4. Reduce the heat to low and let the mixture simmer for about 1.5 hours, allowing the flavors to meld beautifully.
  5. After 1.5 hours, add the rock sugar to the pot and stir until it is fully dissolved into the soup.
  6. Continue to simmer the soup for another 30 minutes to enhance the sweetness and flavors.
  7. Once done, turn off the heat and allow the soup to cool slightly before serving.
