Ingredients

Unsalted butter
2 tablespoons, plus more for greasing
Vanilla extract
1 teaspoon
Whole milk
1 cup
Large eggs

All-purpose flour
1/2 cup
Granulated sugar
1/2 cup, plus extra for sprinkling
Hazelnuts
1/2 cup, roughly chopped
Cherries
2 cups, pitted and halved

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9-inch baking dish with the additional butter.
  2. Spread the pitted and halved cherries and chopped hazelnuts evenly in the bottom of the greased baking dish.
  3. In a mixing bowl, combine the granulated sugar, all-purpose flour, and salt, whisking until well blended.
  4. In another bowl, whisk together the eggs, milk, vanilla extract, and melted butter until smooth and fully combined.
  5. Gradually add the dry ingredients to the wet mixture, whisking continuously until the batter is smooth and free of lumps.
  6. Pour the batter evenly over the cherries and hazelnuts in the baking dish.
  7. Bake for 45 minutes, or until the clafoutis is puffed and golden brown on top. A toothpick inserted in the center should come out clean.
  8. Allow the clafoutis to cool slightly before serving. Dust with powdered sugar if desired.
