Ingredients
- Graham cracker crumbs
- 1 ½ cups
- Unsalted butter
- 1/2 cup, melted
- Cream cheese
- 24 oz, softened
- Granulated sugar
- 1 cup
- Vanilla extract
- 1 teaspoon
- Eggs
- 3 large
- Cherry pie filling
- 1 can (21 oz)
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Stir until the mixture resembles wet sand.
- Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Bake the crust for 8-10 minutes in the preheated oven, then set aside to cool.
- In a separate mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
- Add the eggs, one at a time, mixing well after each addition until fully incorporated. Be careful not to overbeat.
- Pour the cream cheese mixture over the prepared crust in the springform pan, spreading it evenly.
- Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly golden. A slight jiggle in the center is okay, as it will firm up while cooling.
- Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight to chill and set completely.
- Before serving, spread the cherry pie filling evenly over the top of the cheesecake.
