Ingredients

Whole duck

Honey
1/2 cup
Cherry wood chips
2 cups, soaked in water for 30 minutes
Garlic powder
1 teaspoon
Black pepper
1 teaspoon
Salt
1 tablespoon
Optional: Fresh herbs (thyme, rosemary)

Instructions

  1. Begin by cleaning the duck thoroughly, removing any innards, and patting it dry with paper towels.
  2. In a small bowl, mix together the salt, black pepper, and garlic powder. Rub this spice blend generously all over the duck, making sure to season both the inside and outside for maximum flavor.
  3. Preheat your smoker to 225°F (107°C) and add the soaked cherry wood chips to the smoker box.
  4. Carefully place the duck in the smoker breast side up and smoke for approximately 4 hours, or until the internal temperature of the thickest part of the duck reaches 165°F (74°C).
