
Chicken and Mushroom Omelette
This delicious omelette is filled with tender chicken and sautéed mushrooms, perfect for a hearty breakfast or brunch.
Ingredients
- Green onions (2 tablespoons, chopped)
- Cheddar cheese (1/2 cup, shredded)
- Butter (2 tablespoons)
- Salt and pepper (to taste)
- Milk (2 tablespoons)
- Eggs (4)
- Mushrooms (1 cup, sliced)
- Chicken breast (1, cooked and shredded)
Instructions
- In a skillet, melt 1 tablespoon of butter over medium heat.
- Add the sliced mushrooms and cook until they are tender and lightly browned, about 5 minutes. Remove from the skillet and set aside.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- In the same skillet, melt the remaining tablespoon of butter over medium heat.
- Pour the egg mixture into the skillet and cook until the edges start to set, about 2 minutes.
- Sprinkle the shredded chicken, sautéed mushrooms, cheddar cheese, and green onions evenly over one half of the omelette.
- Fold the other half of the omelette over the filling and cook for another 2-3 minutes, or until the cheese is melted and the omelette is cooked through.
- Slide the omelette onto a plate and serve hot.
