Butter
2 tablespoons
Mushrooms
1 cup, sliced
Chicken breast
1 cup, cooked and shredded
Eggs
4 large
Milk
2 tablespoons
Salt
to taste
Black pepper
to taste
Cheddar cheese
1/2 cup, shredded
Green onions
2, chopped

Instructions

  1. In a skillet, melt 1 tablespoon of butter over medium heat.
  2. Add the sliced mushrooms and cook, stirring occasionally, until they are tender and lightly browned, about 5 minutes. Remove from the skillet and set aside.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. In the same skillet, melt the remaining tablespoon of butter over medium heat.
  5. Pour the egg mixture into the skillet, tilting the pan to ensure even distribution, and cook until the edges start to set, about 2 minutes.
  6. Sprinkle the cooked chicken, sautéed mushrooms, shredded cheddar cheese, and chopped green onions evenly over one half of the omelette.
  7. Carefully fold the other half of the omelette over the filling and cook for an additional 2-3 minutes, or until the cheese is melted and the omelette is cooked through.
  8. Slide the omelette onto a plate, garnish with extra green onions if desired, and serve hot.
