
Chicken and Waffle Burrito
This unique twist on a classic combines the flavors of crispy fried chicken, fluffy waffles, and savory fillings in a convenient burrito form.
Ingredients
- Hot sauce (to taste)
- Sour cream (1/4 cup)
- Avocado (1, sliced)
- Bacon (4 slices, cooked and crumbled)
- Scrambled eggs (4)
- Cheddar cheese (1/2 cup, shredded)
- Maple syrup (1/4 cup)
- Frozen waffles (4)
- Vegetable oil (2 cups)
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Baking powder (1 teaspoon)
- Milk (1/2 cup)
- Eggs (2)
- All (purpose flour - 1 cup)
- Boneless, skinless chicken breasts (2)
Instructions
- Preheat the oven to 200°F to keep the cooked components warm.
- Season the chicken breasts with salt and pepper.
- In a shallow dish, whisk together the flour, baking powder, salt, and black pepper.
- In another shallow dish, whisk together the eggs and milk.
- Dip each chicken breast into the flour mixture, then into the egg mixture, and back into the flour mixture to coat.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Fry the chicken breasts for about 5-6 minutes per side, or until golden brown and cooked through.
- Transfer the cooked chicken to a baking sheet and keep warm in the oven.
- Toast the frozen waffles according to package instructions.
- To assemble the burritos, place a waffle on a clean surface.
- Top with a cooked chicken breast, drizzle with maple syrup, and sprinkle with shredded cheddar cheese.
- Add scrambled eggs, crumbled bacon, sliced avocado, sour cream, and hot sauce to taste.
- Fold in the sides of the waffle and roll it up tightly into a burrito shape.
- Repeat with the remaining waffles and ingredients.
