Instructions

  1. Preheat the oven to 200°F (93°C) to keep the cooked components warm.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a shallow dish, whisk together the flour, baking powder, salt, and black pepper until well combined.
  4. In another shallow dish, whisk together the beaten eggs and milk until smooth.
  5. Dip each chicken breast into the flour mixture, coating it evenly, then dip it into the egg mixture, and finally back into the flour mixture to create a thick coating.
  6. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the chicken breasts.
  7. Fry the chicken for about 5-6 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  8. Transfer the cooked chicken to a baking sheet and place it in the preheated oven to keep warm.
  9. Toast the frozen waffles according to package instructions until golden and crispy.
  10. To assemble the burritos, lay a waffle flat on a clean surface.
  11. Top the waffle with a cooked chicken breast, then drizzle with maple syrup and sprinkle with shredded cheddar cheese.
  12. Add the scrambled eggs, crumbled bacon, sliced avocado, a dollop of sour cream, and hot sauce to taste.
