Servings: 4

Ingredients

  • Chicken breasts (4)
  • Buttermilk (2 cups)
  • Hot sauce (1 tablespoon)
  • All-purpose flour (2 cups)
  • Salt (1 teaspoon)
  • Ground black pepper (1/2 teaspoon)
  • Vegetable oil (for frying)
  • Waffle mix (2 cups)
  • Eggs (2)
  • Milk (1 1/2 cups)
  • Butter (4 tablespoons, melted)
  • Maple syrup (to serve)

Instructions

  1. In a large bowl, combine the buttermilk and hot sauce. Add the chicken breasts and ensure they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours.
  2. Preheat your waffle iron and heat your deep fryer or a large pot of vegetable oil to 375°F (190°C).
  3. In a shallow dish, mix the flour with salt and pepper.
  4. Remove the chicken from the buttermilk marinade, allowing any excess to drip off. Dredge the chicken in the flour mixture, shaking off any excess.
  5. Fry the chicken in the deep fryer or pot until golden brown and cooked through, about 10 minutes. Ensure the internal temperature of the chicken reaches 165°F (74°C).
  6. While the chicken is frying, prepare the waffles: In a large bowl, combine the waffle mix, eggs, milk, and melted butter. Cook the waffles according to your waffle iron's instructions.
  7. Serve the fried chicken on top of the waffles, drizzled with maple syrup and a knob of butter on top.
