- Chicken breasts
- 2, boneless and skinless
- Olive oil
- 2 tablespoons
- Salt
- 1 teaspoon, divided
- Black pepper
- 1/2 teaspoon, freshly cracked
- Garlic
- 2 cloves, minced
- Lemon juice
- 2 tablespoons, freshly squeezed
- Caesar dressing
- 1/2 cup, homemade or store-bought
- Parmesan cheese
- 1/2 cup, freshly grated
- Croutons
- 1 cup, store-bought or homemade
- Romaine lettuce
- 1 large head, chopped
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, combine 1 tablespoon of olive oil, 1/2 teaspoon of salt, and black pepper. Rub this mixture all over the chicken breasts.
- Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Let the chicken rest for a few minutes before slicing it into thin strips.
- In a large bowl, combine the chopped romaine lettuce, croutons, and grated Parmesan cheese.
- In a separate small bowl, whisk together the Caesar dressing, minced garlic, lemon juice, and the remaining 1/2 teaspoon of salt until well combined.
- Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
- Divide the salad onto plates and top each serving with the grilled chicken slices.
