Ingredients

Chicken breasts
2, boneless and skinless
Olive oil
2 tablespoons
Salt
1 teaspoon, divided
Black pepper
1/2 teaspoon, freshly cracked
Garlic
2 cloves, minced
Lemon juice
2 tablespoons, freshly squeezed
Caesar dressing
1/2 cup, homemade or store-bought
Parmesan cheese
1/2 cup, freshly grated
Croutons
1 cup, store-bought or homemade
Romaine lettuce
1 large head, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, combine 1 tablespoon of olive oil, 1/2 teaspoon of salt, and black pepper. Rub this mixture all over the chicken breasts.
  3. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Let the chicken rest for a few minutes before slicing it into thin strips.
  4. In a large bowl, combine the chopped romaine lettuce, croutons, and grated Parmesan cheese.
  5. In a separate small bowl, whisk together the Caesar dressing, minced garlic, lemon juice, and the remaining 1/2 teaspoon of salt until well combined.
  6. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
