Chicken Chettinad

Ingredients
- Oil (2 tablespoons)
- Onions (2 medium, finely chopped)
- Ginger garlic paste (1 tablespoon)
- Tomatoes (2 medium, chopped)
- Chicken (1 kg, cut into pieces)
- Curry leaves (1 sprig)
- Chettinad masala (2 tablespoons)
- Coriander powder (1 tablespoon)
- Turmeric powder (1/2 teaspoon)
- Chilli powder (1 tablespoon)
- Salt (to taste)
Instructions
- Heat the oil in a large pan over medium heat. Add the finely chopped onions and sauté until they turn golden brown, which should take about 8-10 minutes.
- Stir in the ginger garlic paste and continue to fry for another 2-3 minutes until fragrant.
- Add the chopped tomatoes to the pan and cook until they soften and blend into a sauce, about 5-7 minutes.
- Sprinkle in the chilli powder, turmeric powder, coriander powder, Chettinad masala, and salt. Mix well, allowing the spices to toast slightly in the oil for about 2 minutes.
- Introduce the chicken pieces to the pan. Mix thoroughly to ensure the chicken is well-coated with the spice mixture. Cook on medium heat for 10-15 minutes, stirring occasionally.
- Pour in a cup of water and cover the pan with a lid. Reduce the heat to low and let it simmer for another 20 minutes, or until the chicken is cooked through and tender.
- Once done, garnish with fresh curry leaves before serving hot.
