Ingredients

Oil
2 tablespoons
Onions
2 medium, finely chopped
Ginger garlic paste
1 tablespoon
Tomatoes
2 medium, chopped
Chicken
1 kg, cut into pieces
Curry leaves
1 sprig
Chettinad masala
2 tablespoons
Coriander powder
1 tablespoon
Turmeric powder
1/2 teaspoon
Chilli powder
1 tablespoon
Salt
to taste

Instructions

  1. Heat the oil in a large pan over medium heat. Add the finely chopped onions and sauté until they turn golden brown, which should take about 8-10 minutes.
  2. Stir in the ginger garlic paste and continue to fry for another 2-3 minutes until fragrant.
  3. Add the chopped tomatoes to the pan and cook until they soften and blend into a sauce, about 5-7 minutes.
  4. Sprinkle in the chilli powder, turmeric powder, coriander powder, Chettinad masala, and salt. Mix well, allowing the spices to toast slightly in the oil for about 2 minutes.
  5. Introduce the chicken pieces to the pan. Mix thoroughly to ensure the chicken is well-coated with the spice mixture. Cook on medium heat for 10-15 minutes, stirring occasionally.
  6. Pour in a cup of water and cover the pan with a lid. Reduce the heat to low and let it simmer for another 20 minutes, or until the chicken is cooked through and tender.
  7. Once done, garnish with fresh curry leaves before serving hot.
