Ingredients

Unsalted butter
3 tablespoons
Chicken breast, diced
1 pound
Onion, diced
1 medium
Carrots, diced
2 medium
Celery, diced
2 stalks
Potatoes, peeled and diced
2 medium
Corn (fresh, frozen, or canned)
1 cup
Chicken broth
4 cups
Whole milk
1 cup
All-purpose flour
1/4 cup
Garlic powder
1 teaspoon
Salt
1 teaspoon, adjust to taste
Black pepper
1/2 teaspoon, adjust to taste
Fresh parsley, chopped
2 tablespoons for garnish

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced chicken and cook until browned, about 5-7 minutes. Remove the chicken from the pot and set aside.
  3. In the same pot, add the diced onion, carrots, celery, and potatoes. Sauté until the vegetables are tender, approximately 5-8 minutes.
  4. Pour in the chicken broth and bring to a boil, scraping any browned bits from the bottom of the pot for added flavor.
  5. In a separate bowl, whisk together the milk and flour until smooth. This mixture will create a creamy base for your chowder.
  6. Slowly pour the milk mixture into the pot while stirring constantly to avoid lumps.
  7. Return the cooked chicken to the pot and add the corn, garlic powder, salt, and pepper. Reduce the heat and let it simmer for 15 minutes, allowing the flavors to meld together.
