Hearty Chicken Chowder

Warm up with a bowl of this delightful Hearty Chicken Chowder, a comforting dish that blends tender chicken, fresh vegetables, and a rich, creamy broth. This chowder is inspired by traditional New England recipes, where chowders have been a staple for generations. The gentle sweetness of corn, the earthiness of potatoes, and the aromatic herbs create a symphony of flavors that will envelop you like a warm hug on a chilly day. Each spoonful is a reminder of home and family gatherings, making it a cherished recipe for all.

Servings: 6

Ingredients

  • Unsalted butter (3 tablespoons)
  • Chicken breast, diced (1 pound)
  • Onion, diced (1 medium)
  • Carrots, diced (2 medium)
  • Celery, diced (2 stalks)
  • Potatoes, peeled and diced (2 medium)
  • Corn (fresh, frozen, or canned) (1 cup)
  • Chicken broth (4 cups)
  • Whole milk (1 cup)
  • All-purpose flour (1/4 cup)
  • Garlic powder (1 teaspoon)
  • Salt (1 teaspoon, adjust to taste)
  • Black pepper (1/2 teaspoon, adjust to taste)
  • Fresh parsley, chopped (2 tablespoons for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced chicken and cook until browned, about 5-7 minutes. Remove the chicken from the pot and set aside.
  3. In the same pot, add the diced onion, carrots, celery, and potatoes. Sauté until the vegetables are tender, approximately 5-8 minutes.
  4. Pour in the chicken broth and bring to a boil, scraping any browned bits from the bottom of the pot for added flavor.
  5. In a separate bowl, whisk together the milk and flour until smooth. This mixture will create a creamy base for your chowder.
  6. Slowly pour the milk mixture into the pot while stirring constantly to avoid lumps.
  7. Return the cooked chicken to the pot and add the corn, garlic powder, salt, and pepper. Reduce the heat and let it simmer for 15 minutes, allowing the flavors to meld together.
  8. Before serving, garnish with fresh parsley to add a pop of color and freshness.
