Authentic Chicken Fajita Sandwich

Ingredients
- 1/2 cup Guacamole
- 1/2 cup Salsa
- 1/4 cup Sour cream
- 8 slices Cheese, Monterey Jack or Cheddar
- 4 Ciabatta rolls
- to taste Salt and pepper
- 2 tablespoons Fajita seasoning
- 2 tablespoons Olive oil
- 1, large, sliced Onion
- 2, large, sliced Bell peppers
- 2, large Chicken breast

Instructions
- Preheat the grill or grill pan over medium-high heat.
- Season the chicken breasts on both sides with fajita seasoning, salt, and pepper.
- Grill the chicken for 6-8 minutes per side, or until the juices run clear and the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes.
- Meanwhile, heat olive oil in a skillet over medium heat.
- Add the sliced bell peppers and onion to the skillet and sauté until they are tender and have a slight char, about 5-7 minutes.
- Slice the grilled chicken into thin strips.
- Slice the ciabatta rolls in half and lightly toast them under a broiler or in a toaster oven.
- Spread a layer of sour cream on the bottom half of each toasted roll, then top with the sautéed peppers and onions.
- Arrange the sliced chicken on top of the peppers and onions, then place 2 slices of cheese on each sandwich.
- Place the sandwiches under a broiler for 1-2 minutes, or until the cheese is melted and bubbly.
- Remove from the broiler and top each sandwich with a generous spoonful of salsa and a dollop of guacamole.
- Cover with the top half of the ciabatta roll, pressing gently.
