Authentic Chicken Fajita Sandwich

Indulge in the delightful blend of Mexican and American cuisine with this succulent Chicken Fajita Sandwich. Each bite guarantees a burst of flavor with juicy grilled chicken, sautéed peppers, and onions, all nestled in a crispy ciabatta roll. Ingredients

Guacamole

Salsa
1/2 cup

Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. Season the chicken breasts on both sides with fajita seasoning, salt, and pepper.
  3. Grill the chicken for 6-8 minutes per side, or until the juices run clear and the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes.
  4. Meanwhile, heat olive oil in a skillet over medium heat.
  5. Add the sliced bell peppers and onion to the skillet and sauté until they are tender and have a slight char, about 5-7 minutes.
  6. Slice the grilled chicken into thin strips.
  7. Slice the ciabatta rolls in half and lightly toast them under a broiler or in a toaster oven.
  8. Spread a layer of sour cream on the bottom half of each toasted roll, then top with the sautéed peppers and onions.
  9. Arrange the sliced chicken on top of the peppers and onions, then place 2 slices of cheese on each sandwich.
  10. Place the sandwiches under a broiler for 1-2 minutes, or until the cheese is melted and bubbly.
  11. Remove from the broiler and top each sandwich with a generous spoonful of salsa and a dollop of guacamole.
  12. Cover with the top half of the ciabatta roll, pressing gently.
