- Vegetable oil (2 tablespoons)
- Chicken breast (1 pound, diced)
- Garlic (3 cloves, minced)
- Ginger (1 tablespoon, grated)
- Carrots (2 medium, diced)
- Frozen peas (1 cup)
- Eggs (2, beaten)
- Basmati rice (3 cups, cooked and cooled)
- Soy sauce (3 tablespoons)
- Sesame oil (1 tablespoon)
- Salt (to taste)
- Pepper (to taste)
- Green onions (3, chopped for garnish)
Instructions
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the diced chicken breast to the skillet and cook for approximately 5-7 minutes, or until the chicken is browned and fully cooked. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and grated ginger for about 1 minute, until they become fragrant, being careful not to let them burn.
- Add the diced carrots to the skillet and cook for 2-3 minutes until they begin to soften, stirring occasionally.
- Push the carrots to one side of the skillet and pour the beaten eggs into the other side. Stir gently to scramble the eggs until they are fully cooked.
- Return the cooked chicken to the skillet and add the frozen peas. Stir everything together to combine evenly.
- Add the cooked and cooled basmati rice to the skillet. Use a spatula to break apart any clumps and mix well to combine all the ingredients.
