Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper until well combined.
  2. Add the cubed chicken, onion wedges, and bell peppers to the marinade. Toss everything to ensure the chicken and vegetables are evenly coated.
  3. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 24 hours for maximum flavor.
  4. Preheat your grill to medium-high heat.
  5. Once marinated, thread the chicken and vegetables onto skewers, alternating between pieces of chicken and vegetables for a colorful presentation.
  6. Grill the kebabs for 8-10 minutes, turning occasionally, until the chicken is cooked through (internal temperature of 165°F) and the vegetables are tender.
  7. Remove from the grill and let them rest for a few minutes before serving. Serve hot with tzatziki sauce on the side for dipping.
