Servings: 4
Ingredients
- Wooden skewers
- 8-10, soaked in water for 30 minutes
- Cherry tomatoes
- 1 cup
- Red onion
- 1 medium, cut into wedges
- Bell peppers
- 2 medium, assorted colors (red, yellow, green), cut into chunks
- Black pepper
- 1/2 teaspoon
- Salt
- 1 teaspoon
- Ground coriander
- 1 teaspoon
- Ground cumin
- 1 teaspoon
- Paprika
- 1 teaspoon
- Garlic
- 3 cloves, minced
- Lemon juice
- 2 tablespoons
- Olive oil
- 3 tablespoons
- Chicken breast
- 1.5 pounds, cut into 1-inch cubes
Instructions
- In a medium bowl, whisk together olive oil, lemon juice, minced garlic, paprika, cumin, coriander, salt, and black pepper to create a flavorful marinade.
- Add the chicken breast cubes to the marinade, ensuring each piece is well-coated. Cover and let it marinate in the refrigerator for at least 1 hour, or overnight for the best flavor.
- Preheat your grill to medium-high heat, and lightly oil the grill grates to prevent sticking.
- While the grill heats, prepare the skewers. Thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto the wooden skewers, alternating between the ingredients for a colorful presentation.
- Once the grill is ready, place the skewers on the grill. Cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F) and the vegetables are tender.
- Remove the kebabs from the grill and let them rest for a few minutes before serving. Enjoy hot, paired with your favorite dipping sauce or served alongside a fresh salad or fragrant rice.
