Olive oil
2 tablespoons
Chicken breasts
2, cubed
Onion
1, diced
Garlic
3 cloves, minced
Tomato sauce
2 cups
Chicken broth
4 cups
Dried basil
1 teaspoon
Dried oregano
1 teaspoon
Salt
to taste
Pepper
to taste
Cooked pasta
2 cups
Shredded mozzarella cheese
1 cup
Grated parmesan cheese
1/2 cup
Fresh basil leaves
for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the cubed chicken breasts and cook until browned, about 5 minutes. Remove from the pot and set aside.
  3. In the same pot, add the diced onion and minced garlic. Cook until the onion becomes translucent, about another 5 minutes.
  4. Pour in the tomato sauce and chicken broth, followed by the dried basil, dried oregano, salt, and pepper. Bring the mixture to a boil.
  5. Reduce the heat to low and let it simmer for 15 minutes, allowing the flavors to meld together.
  6. Return the cooked chicken to the pot, add the cooked pasta, and stir well to combine.
  7. Allow the soup to simmer for an additional 5 minutes so that everything is heated through.
  8. Ladle the soup into bowls and generously top with shredded mozzarella and grated Parmesan cheese.
  9. Finish off with a garnish of fresh basil leaves before serving.
