
Chicken Salad
A refreshing and delicious chicken salad made with tender chicken, crisp vegetables, and a creamy dressing.
Ingredients
- Cherry tomatoes (for garnish)
- Lettuce leaves (for serving)
- Salt and pepper (to taste)
- Lemon juice (1 tablespoon)
- Dijon mustard (1 tablespoon)
- Greek yogurt (1/4 cup)
- Mayonnaise (1/4 cup)
- Grapes (1/2 cup, halved)
- Red bell pepper (1/2 cup, diced)
- Red onion (1/4 cup, finely chopped)
- Celery (1/2 cup, diced)
- Chicken breast (2 cups, cooked and shredded)
Instructions
- In a large bowl, combine the shredded chicken, celery, red onion, red bell pepper, and grapes.
- In a separate small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
- Pour the dressing over the chicken mixture and toss until well coated.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld.
- To serve, place lettuce leaves on a plate and spoon the chicken salad onto the lettuce.
- Garnish with cherry tomatoes and serve chilled.
