Chicken Salad

A refreshing and delicious chicken salad made with tender chicken, crisp vegetables, and a creamy dressing.

Ingredients

  • Cherry tomatoes (for garnish)
  • Lettuce leaves (for serving)
  • Salt and pepper (to taste)
  • Lemon juice (1 tablespoon)
  • Dijon mustard (1 tablespoon)
  • Greek yogurt (1/4 cup)
  • Mayonnaise (1/4 cup)
  • Grapes (1/2 cup, halved)
  • Red bell pepper (1/2 cup, diced)
  • Red onion (1/4 cup, finely chopped)
  • Celery (1/2 cup, diced)
  • Chicken breast (2 cups, cooked and shredded)

Instructions

  1. In a large bowl, combine the shredded chicken, celery, red onion, red bell pepper, and grapes.
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss until well coated.
  4. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  5. To serve, place lettuce leaves on a plate and spoon the chicken salad onto the lettuce.
  6. Garnish with cherry tomatoes and serve chilled.
