Cooked chicken breast
2 cups, shredded
Celery
1/2 cup, diced
Red onion
1/4 cup, finely chopped
Mayonnaise
1/2 cup
Dijon mustard
1 tablespoon
Lemon juice
1 tablespoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Lettuce leaves
4 large leaves
Tomato
1 large, sliced
Bread
4 slices (whole grain, sourdough, or your choice)

Instructions

  1. In a large bowl, combine the shredded chicken, diced celery, and chopped red onion, mixing well.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and gently toss to coat all the ingredients evenly.
  4. Lay a lettuce leaf on each slice of bread to provide a fresh base.
