Ingredients

Soy sauce
1/4 cup
Lime juice
2 tablespoons
Honey
1 tablespoon
Curry powder
1 teaspoon
Garlic
2 cloves, minced
Chicken breast
2, cut into thin strips
Peanut butter
1/2 cup
Coconut milk
1/4 cup
Sriracha sauce
1 tablespoon
Fresh cilantro
for garnish
Chopped peanuts
for garnish
Lime wedges
for serving

Instructions

  1. In a bowl, combine soy sauce, lime juice, honey, curry powder, and minced garlic to create the marinade.
  2. Add the chicken strips to the marinade, ensuring each piece is well coated. Marinate for at least 1 hour, or ideally overnight for the flavors to fully penetrate.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread the marinated chicken strips onto skewers, ensuring they are evenly spaced.
  5. Grill the skewers for 6-8 minutes, turning occasionally, until the chicken is thoroughly cooked and slightly charred.
  6. While the chicken is grilling, prepare the peanut sauce. In a small saucepan, combine peanut butter, coconut milk, sriracha sauce, and lime juice. Heat over low heat, stirring until ingredients are well combined and the sauce is heated through.
  7. Serve the chicken satay skewers with a liberal drizzle or side of peanut sauce. Garnish with fresh cilantro and chopped peanuts, and serve lime wedges on the side for a refreshing citrus zing.
