
Chicken Satay Skewers
These delicious chicken satay skewers are marinated in a flavorful blend of spices and served with a creamy peanut sauce.
Ingredients
- Fresh cilantro (for garnish)
- Chopped peanuts (for garnish)
- Lime wedges (for serving)
- Sriracha sauce (1 tablespoon)
- Coconut milk (1/2 cup)
- Peanut butter (1/4 cup)
- Garlic (2 cloves, minced)
- Curry powder (1 tablespoon)
- Honey (2 tablespoons)
- Lime juice (2 tablespoons)
- Soy sauce (1/4 cup)
- Chicken breast (2, boneless and skinless)
Instructions
- In a bowl, combine soy sauce, lime juice, honey, curry powder, and minced garlic to make the marinade.
- Cut the chicken breast into thin strips and add them to the marinade. Let it marinate for at least 1 hour, or overnight for best results.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated chicken strips onto skewers.
- Grill the skewers for about 6-8 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- While the chicken is grilling, prepare the peanut sauce by combining peanut butter, coconut milk, sriracha sauce, and lime juice in a small saucepan. Heat over low heat until well combined and heated through.
