4 pieces
Fresh parsley
1/2 cup, chopped
Red onion
1 small, thinly sliced
Tomato
1 large, diced
Cucumber
1 medium, sliced
Greek yogurt
1 cup
Salt and pepper

Paprika
1 teaspoon
Ground coriander
1 teaspoon
Ground cumin
1 teaspoon
Garlic
3 cloves, minced
Lemon juice
2 tablespoons
Olive oil
1/4 cup

Instructions

  1. In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and pepper to concoct the marinade.
  2. Cut the chicken breasts into thin strips and immerse them in the marinade, ensuring they're evenly coated. Allow it to marinate for a minimum of 30 minutes, or overnight if time allows for maximum flavor infusion.
  3. Preheat your grill or grill pan over a medium-high flame. Grill the marinated chicken strips for approximately 6-8 minutes on each side, until they're thoroughly cooked and have a slight char. Once done, set it aside to rest.
  4. Prepare the yogurt sauce by blending the Greek yogurt with a squeeze of lemon juice and a pinch of salt in a small bowl. Adjust to your taste preference.
  5. Toast the pita bread on a grill or toaster until slightly warm and flexible.
