Chicken Souvlaki

- Chicken breasts
- 1.5 lbs, cut into bite-sized pieces
- Olive oil
- 1/4 cup
- Lemon juice
- 3 tablespoons
- Garlic
- 3 cloves, minced
- Dried oregano
- 2 teaspoons
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Cucumber
- 1, sliced
- Red onion
- 1, thinly sliced
- Tomatoes
- 2, diced
- Pita bread
- 4 pieces
- Tzatziki sauce
- 1 cup
Instructions
- In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to create a flavorful marinade.
- Add the chicken pieces to the marinade, tossing to ensure they are evenly coated. Cover and let it marinate in the refrigerator for at least 1 hour, or overnight for deeper flavor.
- Preheat your grill or grill pan over medium-high heat until hot.
- Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- While the chicken is grilling, warm the pita bread on the grill for a few seconds on each side until soft and pliable.
- To serve, spread a generous amount of tzatziki sauce on each warmed pita bread. Top with grilled chicken skewers, and add sliced tomatoes, red onion, and cucumber.
