Servings: 4

Ingredients

  • Chicken breast (1 lb, sliced into thin strips)
  • Vegetable oil (2 tablespoons)
  • Salt (to taste)
  • Pepper (to taste)
  • Cornstarch (1 tablespoon)
  • Sesame oil (1 tablespoon)
  • Oyster sauce (2 tablespoons)
  • Soy sauce (3 tablespoons)
  • Ginger (1 tablespoon, minced)
  • Garlic (3 cloves, minced)
  • Snow peas (1 cup)
  • Carrots (1 cup, julienned)
  • Broccoli florets (1 cup)
  • Bell peppers (1 cup, sliced (any color))

Instructions

  1. In a small bowl, combine the soy sauce, oyster sauce, sesame oil, and cornstarch. Whisk until smooth and set aside.
  2. Heat the vegetable oil in a large skillet or wok over high heat until shimmering.
  3. Add the sliced chicken breast to the skillet and season with salt and pepper. Cook for about 5-6 minutes, stirring frequently, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the minced garlic and ginger. Stir-fry for about 1 minute until fragrant.
  5. Add the sliced bell peppers, broccoli florets, julienned carrots, and snow peas to the skillet. Stir-fry for 3-4 minutes, or until the vegetables are crisp-tender.
  6. Return the cooked chicken to the skillet and pour the prepared sauce over the chicken and vegetables. Stir well to ensure everything is evenly coated.
  7. Cook for an additional 2-3 minutes until the sauce thickens and clings to the chicken and vegetables.
  8. Adjust seasoning with salt and pepper if needed, then remove from heat.
  9. Serve hot over steamed rice or noodles and enjoy your delicious homemade chicken stir fry!
