Chifrijo

Chifrijo is a vibrant and hearty dish that hails from the heart of Costa Rica, making it a beloved staple for locals and visitors alike. This delightful combination of crispy chicharrones (fried pork belly), savory black beans, and fluffy rice creates a symphony of textures and flavors that's sure to tantalize your taste buds. Topped with creamy avocado and served alongside crunchy tortilla chips, Chifrijo is perfect for sharing among friends or enjoying as a fulfilling meal on its own. Its roots in Costa Rican culture make it not just a dish, but an experience rich in tradition and flavor.

Ingredients

Pork belly
1 pound, cut into bite-sized pieces
Salt
to taste
Black pepper
to taste
Tortilla chips
to serve
Cilantro
1/4 cup, chopped
Lime
1, juiced
Avocado
1, sliced
Rice
2 cups, cooked
Black beans
1 can (15 oz), drained and rinsed

Instructions

  1. Season the pork belly pieces with salt and pepper, ensuring each piece is well-coated.
  2. Heat a large skillet over medium-high heat. Once hot, add the pork belly and cook, stirring occasionally, until the pieces are crispy and golden brown, about 10-15 minutes. Remove from heat and set aside.
  3. In a medium saucepan, combine the black beans and lime juice. Heat over medium heat until warmed through, about 5 minutes. Stir in the chopped cilantro and season with salt and pepper to taste.
  4. To assemble, in a bowl, layer the cooked rice at the bottom, followed by the black beans. Top with the crispy pork belly and avocado slices.
  5. Serve immediately with tortilla chips on the side for dipping.

Tips

  • 💡 For added flavor, marinate the pork belly in lime juice and garlic for a few hours before cooking.
  • 💡 If you prefer a healthier version, you can substitute the pork belly with grilled chicken or tofu.
  • 💡 Experiment with different types of beans like pinto or kidney beans to customize the flavor.
