Ingredients
- Pork belly
- 1 pound, cut into bite-sized pieces
- Salt
- to taste
- Black pepper

- Tortilla chips
- to serve
- Cilantro
- 1/4 cup, chopped
- Lime
- 1, juiced
- Avocado
- 1, sliced
- Rice
- 2 cups, cooked
- Black beans
- 1 can (15 oz), drained and rinsed
Instructions
- Season the pork belly pieces with salt and pepper, ensuring each piece is well-coated.
- Heat a large skillet over medium-high heat. Once hot, add the pork belly and cook, stirring occasionally, until the pieces are crispy and golden brown, about 10-15 minutes. Remove from heat and set aside.
- In a medium saucepan, combine the black beans and lime juice. Heat over medium heat until warmed through, about 5 minutes. Stir in the chopped cilantro and season with salt and pepper to taste.
- To assemble, in a bowl, layer the cooked rice at the bottom, followed by the black beans. Top with the crispy pork belly and avocado slices.
- Serve immediately with tortilla chips on the side for dipping.
