Ingredients

Original recipe serves 4

Lime
1, cut into wedges
Avocado
1, pitted and sliced
Queso fresco
1 cup, crumbled
Cilantro
1/2 cup, freshly chopped
Black beans
1 cup, rinsed and drained
Jalapeno
1, seeded and diced
Garlic
2 cloves, minced
Onion
1 medium, diced
Vegetable oil
2 tablespoons
Salsa
2 cups, your choice of red or green
Corn tortilla chips
4 cups

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the diced onion, minced garlic, and diced jalapeno to the skillet. Saute until the onion becomes translucent, about 5 minutes.
  3. Stir in the salsa and black beans, combining them well with the onion mixture.
  4. Add the tortilla chips to the skillet, tossing them gently to ensure they are well coated in the salsa mixture. Let them cook for 2-3 minutes, until they start to soften but still retain some crunch.
  5. Remove the skillet from heat and evenly sprinkle the chilaquiles with crumbled queso fresco and freshly chopped cilantro.
  6. Serve the chilaquiles hot, garnished with sliced avocado and lime wedges which can be squeezed over the dish for an extra burst of freshness.

Tips

  • 💡 For a non-vegetarian version, you can add shredded chicken or cooked scrambled eggs to the chilaquiles.
