Authentic Mexican Chilaquiles

Ingredients

- 1 cup, crumbled Queso fresco
- 1/2 cup, freshly chopped Cilantro
- 1 cup, rinsed and drained Black beans
- 1, seeded and diced Jalapeno
- 2 cloves, minced Garlic
- 1 medium, diced Onion
- 2 tablespoons Vegetable oil
- 2 cups, your choice of red or green Salsa
- 4 cups Corn tortilla chips

Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the diced onion, minced garlic, and diced jalapeno to the skillet. Saute until the onion becomes translucent, about 5 minutes.
- Stir in the salsa and black beans, combining them well with the onion mixture.
- Add the tortilla chips to the skillet, tossing them gently to ensure they are well coated in the salsa mixture. Let them cook for 2-3 minutes, until they start to soften but still retain some crunch.
- Remove the skillet from heat and evenly sprinkle the chilaquiles with crumbled queso fresco and freshly chopped cilantro.
- Serve the chilaquiles hot, garnished with sliced avocado and lime wedges which can be squeezed over the dish for an extra burst of freshness.
Tips
- For a non-vegetarian version, you can add shredded chicken or cooked scrambled eggs to the chilaquiles.
