Chilate
Chilate is a beloved traditional Salvadoran beverage that warms the soul with its rich combination of corn, cacao, and spices. Ingredients
- 1 cup Corn kernels
- 4 cups Water
- 2 Cinnamon sticks
- 5 Whole cloves
- 1 teaspoon (for garnish) Ground cinnamon
- 1/2 cup Cacao powder
- 1/4 cup (adjust to taste) Sugar
- 1 cup Evaporated milk

Instructions
- In a large pot, combine the corn kernels, water, cinnamon sticks, and cloves.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 20 minutes, or until the corn is tender.
- Remove the cinnamon sticks and cloves from the pot using a slotted spoon.
- Using a blender or immersion blender, puree the corn mixture until smooth and creamy.
- Return the pureed mixture to the pot and add the cacao powder and sugar. Stir well to combine.
- Simmer the mixture for an additional 5 minutes, stirring occasionally to prevent sticking.
- Remove from heat and stir in the evaporated milk until fully incorporated.
- Serve hot, and sprinkle ground cinnamon on top for an extra touch of flavor.

- For a richer flavor, consider adding a pinch of nutmeg or a splash of vanilla extract to the mixture during the final simmer.
